The evening rush at a butchery is its own kind of chaos. Three people want stewing beef, one wants goat ribs cut a particular way, a hotel driver is waiting for an order that was phoned in at lunchtime, and the cashier is working out prices in their head from the scale display. The till fills up. At closing, it still isn't clear whether today made money.
That's the honest problem with most butcheries. They're busy, they take money all day, and the owner can't say what the margin was.
The short answer: a butchery POS should price every cut by the kilo and work out the exact amount from the weight, record each carcass at cost and break it down into cuts so you can see the yield, log spoilage and trimmings as waste every day, keep hotels and restaurants on account, and show sales, waste and margin by cut and by hour. EliteTeQ does this from USD 499 per year, and it keeps selling when the internet drops.
Why meat is harder than it looks
From the street it seems simple: buy, cut, sell. Inside, almost everything moves.
- Every sale is a different weight, so every sale is a different number.
- Beef, goat, mutton and chicken each have their own price per kilo, and those prices follow the livestock market.
- Meat spoils. What doesn't sell today is worth less tomorrow.
- Sales are fast, mostly cash or DuitNow, and easy to lose track of.
A notebook hides all of this. A POS makes it visible.
Price per kilo, worked out by the till
Every cut in EliteTeQ has a price per kilo. Your staff weigh the meat on your scale as they do now, enter the weight, and the till works out the exact price. No mental arithmetic at a busy counter, and no rounding in anyone's favour.
To be clear, EliteTeQ doesn't connect to the scale. The cashier enters the weight. That's usually enough to end the "round it up" arguments, because the price per kilo is fixed and the receipt shows the working.
Quick buttons for your popular cuts keep the counter moving, and every payment type sits on one screen.
Carcass breakdown and yield
This is where most butcheries quietly lose money, and where a POS earns its keep.
Record each carcass at what you paid for it, then break it down into cuts: steak, stewing beef, mince, ribs, bones, trim. EliteTeQ shows the yield and margin of each animal. Stock is then held by cut, in kilograms, in every branch, and updated as you cut and sell.
Here's a hypothetical. Say two carcasses from the same supplier cost about the same, but one gives you noticeably less sellable meat than the other. Without a breakdown you'd never know. With one, you can see which supplier's animals actually pay and buy accordingly.
Waste you can see
Spoiled meat and trimmings are recorded as waste at the end of each day. The stock stays true, and losses are written down instead of being absorbed silently into "it was a slow week".
Once waste is on record, patterns show up. Maybe mince is always being thrown out on Mondays, or a cold-room problem is costing more than you thought. Sales, waste and margin by cut and by hour help you decide how much to cut for the week ahead.
Hotels, restaurants and caterers on account
Trade customers are often the steadiest part of a butchery's business, and the hardest to keep track of. Each hotel, restaurant or caterer gets an account with a credit limit. Orders are invoiced by weight, balances have due dates, and statements go out on WhatsApp. The driver who says "the boss will pay at the end of the month" now has a balance both of you can see.
Knowing who sold what
Every person behind the counter has their own login. Voids and price changes are logged with a name and a time. That isn't about distrust. It means that when the cash doesn't match, you can find out why instead of blaming the whole shift.

Practical points
- Offline: a dropped connection doesn't stop the counter. Sales sync when the network returns.
- Payments: EliteTeQ records DuitNow, card and cash against each sale, and keeps sales records ready for RMCD. In Kenya, M-Pesa is integrated directly.
- Checking in from elsewhere: you can see the day's sales, waste and margin from your phone before the shop closes, even when you're at the market buying stock.
- Setup: setup and product import are free, so your cuts and prices per kilo are ready before the first customer.
